Here in New York, fall is synonymous with apples and all their forms: apple tarts, cider donuts, apple pies, candy apples, apple butter, and, of course, apple cider.

Spain also has a long tradition of cooking with apples. Asturias, a region along the northern coast of Spain, is the home of “sidra natural” or natural cider. This hard cider is usually described as being particularly tart and funky, which is quite distinct from many American ciders that tend towards sweetness.
