As our holiday gift to you, this month we have bonus recipe by @mediterreanminutes! “Truchas de Navidad” are a traditional dessert from the Canary Islands made with sweet potatoes and almonds.

Sweet potatoes are one of the oldest vegetables known to mankind, and scientists believe that they were first cultivated in Central America thousands of years ago. Their first appearance is dated back to 750 B.C.E. in Peruvian records! In the 16th century, the sweet potato was taken to Spain where it was cultivated on a small scale, but it never became popular across Europe.

Despite that, the sweet potato is a quintessential part of the Spanish recipe for “Truchas de Navidad.”
